Equipment

  • 1 Large pot or saucepan To boil the noodles and prepare the gravy.
  • 1 Strainer or colander To drain the cooked noodles.
  • 1 Kadai or frying pan To fry the noodles until crisp.
  • Tissue paper or paper towels To absorb excess oil from the fried noodles.
  • 1 Another pan or skillet To sauté the vegetables and prepare the gravy.
  • 1 Whisk or fork To dilute the cornflour in water for thickening the gravy.

Ingredients
  

  • 1 packet Egg Noodles 500 gms
  • 3 nos Eggs
  • Oil for deep frying

For Gravy:

  • 2 nos Onion large sized - sliced
  • 1 no Carrot medium thinly sliced
  • 1 handful Beans sliced
  • 1 cup Cabbage finely shredded
  • 1 bowl Chicken boiled and shredded
  • 1 handful Mushrooms sliced
  • 2 nos Tomatoes large sized - pureed
  • ¼ cup Tomato sauce
  • 2 tbsp Cornflour
  • 2 tsp Pepper powder
  • 2 tbsp Sugar
  • 1 tsp Salt

Instructions
 

  • Boil water in a large pot and add salt and 1 tbsp of oil. Cook the egg noodles according to the package instructions. Drain the cooked noodles and rinse under cold water to cool. Set aside.
  • Heat oil in a deep pan for frying. Fry the cooked noodles in batches until crispy and light golden. Remove and drain excess oil on a tissue paper. Set aside.
  • In another pan, heat 2 tbsp of oil. Add sliced onions and sauté briefly over medium heat. Add the vegetables one by one and stir-fry for a few minutes. Add the chicken and mushrooms.
  • Pour in the tomato puree, tomato sauce, sugar, pepper powder, and salt. Cook for five minutes.
  • In a small bowl, dilute cornflour in water and mix well. Add the cornflour mixture to the pan and stir until the gravy slightly thickens. Remove from heat.

Notes

  • You can use any variety of egg noodles for this recipe, such as spaghetti or lo mein noodles.
  • Feel free to adjust the quantity of vegetables and chicken according to your preference.
  • For a vegetarian version, you can omit the chicken and add more vegetables or tofu.
  • Customize the spiciness of the gravy by adjusting the amount of pepper powder and adding chili sauce if desired.
  • Garnish the American Chopsuey with chopped spring onions or cilantro for added freshness and flavor.
 
Serving:
Place the fried noodles on the serving plate, top it up with hot vegetables mix gravy and with a fried egg
