Ingredients
- 5 nos Brinjals small
- 1 no Potatoes big sized - cut into cubes
- 1 no Onions big sized - chopped finely
- 1 handful Dry Prawns cleaned
- 1 tsp Chill powder
- ½ tsp Haldi powder (turmeric powder)
- 1 tbsp Goda masala
- Coconut scrapped - a little
- Salt as per taste
- Coriander leaves chopped
- Oil as required
Instructions
- Cut the brinjals into medium-sized pieces or slit them crosswise, and soak them in water for some time.
- Heat oil in a Kadai or pan. Add chopped onions and sauté for a minute.
- Add potatoes, brinjals, and dry prawns to the pan. Cook with a closed lid until they are tender.
- Once cooked, add chili powder, turmeric powder, and salt. Mix well until the masala coats the vegetables and oil starts to separate.
- Add scraped coconut, Goda masala, and chopped coriander leaves.
- Serve hot as a side dish.
Notes
- You can adjust the spice level according to your preference by adding more or less chili powder.
- Make sure to clean the dry prawns properly before using them in the recipe.
