Ingredients
- ½ kg Besan gram flour
- 200 gms Curd
- 1 no Lime
- ½ tsp Soda Powder
- 2 packets ENO
- 1 pinch Turmeric powder haldi
- Salt as per taste
- 1 cup Water adjust as per req
- 2 tsp Sugar
- Ginger-green chilly paste optional
- oil- 1tsp
For Seasoning:
- 2 tbsp oil
- 2 tsp Mustard
- ½ tsp Hing powder (asafoetida)
- 3 nos green chillies slit in half
Instructions
- Sieve the Besan to remove any lumps.
- In a bowl, mix Besan, sugar, and water gradually to make a smooth paste. Add lime juice and let it rest for 15 minutes.
- In a pressure cooker, add water (around 2 glasses) and place a stand inside. Heat the cooker on low flame.
- To the Besan mixture, add haldi, salt, ginger-green chilly paste (if desired). Mix well.
- Add ENO and 1 tsp of oil to the mixture. Stir in one direction for 10 seconds until the batter starts to double in volume.
- Grease a cake tin or a deep bowl with oil. Pour the batter into the greased tin and tap it gently to spread it evenly.
- Place the tin inside the pressure cooker and cook for 20 to 30 minutes without the whistle.
- Check the Dhokla's doneness using a knife. If the knife comes out clean, it's cooked. If not, cook for a few more minutes.
- Once cooked, remove the tin from the cooker and let it cool. Cut the Dhokla into desired sizes and transfer it to a plate.
- For the seasoning, heat oil in a pan and add mustard. When it splutters, add hing and green chilly. Pour this seasoning over the Dhokla. Garnish with chopped coriander leaves.
- Mix 1/2 cup of water and 2 tsp sugar. Sprinkle this mixture on the Dhokla to keep it moist.
