Ingredients

  • 4 cups Basmati Rice
  • 2 nos Onions large, chopped
  • 1 no Tomatoes large, chopped
  • 1 tbsp Red Chilli Powder
  • ½ tbsp Turmeric Powder (Haldi)
  • 1 & ½ tbsp Coriander Powder
  • 1 tbsp Cumin Powder (Jeera)
  • 2 tsp Ginger garlic paste
  • ¼ cup Yogurt (Curds/Dahi)
  • Salt as per taste
  • 5 tbsp Oil
  • Ghee as per requirement
  • Coriander leaves and Mint leaves chopped finely for garnishing
  • 2 nos Onions finely sliced and fried till crisp For Garnishing
  • 7-8 nos Pepper corns
  • 8-9 nos Cloves (Lavang)
  • 2 inch Cinnamon Stick (Dalchini)
  • 4 nos Cardamom Pods 2 Green & 2 Black (Eliachi)
  • 2 nos Bay leaves (Tej Patta)

Instructions
 

Method: Follow Step by Step 1, 2 and 3

    Step 1: Prepare the Vegetable Gravy

    • Heat oil in a shallow bottom vessel.
    • Add cloves, cinnamon, pepper corns, and bay leaves.
    • Once they start to sizzle, add chopped onions and fry until they turn light pink.
    • Add tomatoes and cook until slightly mashed.
    • Stir in red chilli powder, turmeric powder, coriander powder, and cumin powder. Mix well.
    • Add ginger garlic paste and cook until the raw smell disappears.
    • Pour in yogurt and cook on low flame until well blended.
    • Add mixed vegetables, salt, and water. Mix well and let it cook until vegetables are tender and there is a flavorful gravy.
    • Turn off the flame and set aside.

    Step 21: Cook the Rice

    • Wash the basmati rice thoroughly and soak it for half an hour.
    • Drain the water and let the rice sit in a strainer for at least one hour.
    • In a deep vessel, bring enough water to boil and add 1 tablespoon of oil and salt.
    • Add the rice and cook until it is slightly tender (still slightly raw). Drain the water completely.

    Step 3: Layering the Biryani

    • Take a deep non-stick vessel with a lid.
    • Begin by adding a spoonful of the flavorful vegetable gravy at the bottom.
    • Layer it with aromatic coriander leaves, refreshing mint leaves, and crispy fried onions, followed by a layer of perfectly cooked rice.
    • Repeat this process until all the vegetable gravy and rice are used.
    • Finish with a drizzle of ghee on top of the rice, enhancing the flavors.
    • Close the lid and cook on low flame for 45 minutes, allowing the biryani to absorb the enticing aromas.

    Step 4: Serve

    • Once done, remove the lid and give it a gentle mix, ensuring the flavors are evenly distributed.
    • Garnish with additional crispy fried onions for added crunch and appeal.
    • Serve the piping hot and mouthwatering Veg Biryani with salads or raita, relishing the delectable homemade goodness.
