Ingredients
  

  • 1 kg Chicken cleaned, cut into medium size pieces
  • 2 glasses Basmati Rice
  • 3 nos Onions medium, chopped
  • 2 nos Tomatoes large, chopped
  • 1 tbsp Chilli powder
  • ½ tsp Turmeric powder (haldi)
  • 2 tsp Coriander powder (Dhania)
  • 1 & ½ tsp Cumin powder (jeera)
  • 1 tbsp Ginger garlic paste
  • ¼ cup Yogurt
  • Salt as per taste
  • 2 tbsp Oil
  • Ghee as per requirement
  • Kesar (Saffron strands) mixed in 5 tbsp of milk
  • Coriander leaves and Mint leaves chopped finely for garnishing
  • 2 nos Onions large, finely sliced and fried till crisp
  • 7 nos Pepper corns (kali mirch)
  • 5 nos Cloves ( aung)
  • 3 inches Cinnamon (Dalchini)
  • 4 nos Cardamom (elaichi)
  • 2 nos Bay leaves (Tej Patta)

Instructions
 

Method: Follow Step by Step 1, 2 and 3

    Step 1: Chicken Gravy

    • Heat oil in a shallow bottom vessel. Add cloves, cinnamon, peppercorns, and bay leaves.
    • Once they start to crackle, add chopped onions and fry until light pink. Then add tomatoes and cook until slightly mashed.
    • Add chilli powder, turmeric powder, coriander powder, and cumin powder. Mix well.
    • Add yogurt and cook on low flame until well blended and oil separates.
    • Add chicken pieces, salt, and water. Mix well and cook until the chicken is cooked through. Set aside.

    Step 2: Rice Preparation

    • Wash the basmati rice well and soak it for half an hour. Drain the water and let it sit in a rice strainer for an hour.
    • In a deep vessel, boil water and add 1 tbsp of oil and salt. Add the rice and cook until slightly tender. Drain the water completely.

    Step 3: Layering and Serve

    • Take a deep non-stick vessel.
    • Add a spoonful of chicken gravy as the first layer, followed by coriander leaves, mint leaves, and fried onions. Add a layer of cooked rice.
    • Repeat the process until all the chicken gravy and rice are used. Top it with ghee and saffron-infused milk.
    • Close the lid and cook on low flame for 45 minutes.
    • Once done, serve the hot and flavorful Chicken Biryani with salads.
