Ingredients
Grind to a paste:
- 1 handfull coriander leaves
- 1 tsp cumin seeds (jeera)
- 1 no green chillies (according to taste)
- 4 nos garlic cloves
- water (as needed for grinding)
Other Ingredients:
- 2 tbsp oil
- 2 nos onions (medium sized, finely chopped)
- 1 no tomato (large, finely chopped)
- 1 tsp red chilli powder
- ½ tsp turmeric powder (haldi)
- 2 tsp coriander powder
- ½ tsp garam masala powder
- 2 cups water
- salt (as per taste)
- 3 nos eggs
Instructions
- In a blender, grind together coriander leaves, cumin seeds, green chilies, garlic, and some water to form a fine paste.
- Heat 2 tablespoons of oil in a pan and add the finely chopped onions. Fry until they turn pinkish.
- Add the finely chopped tomatoes to the pan and cook until they become soft.
- Stir in the red chili powder, turmeric powder, and coriander powder. Cook for another 2 minutes.
- Add the prepared paste to the pan and fry until a nice aroma develops.
- Sprinkle garam masala powder and salt, and continue cooking.
- Pour in 2 cups of water for the gravy and bring it to a boil.
- Break the eggs into the pan and sprinkle salt and pepper powder over them.
- Be careful not to overcook the eggs.
- Serve the dish hot with chapatis or roti.
