Ingredients
  

Grind to a paste:

  • 1 handfull coriander leaves
  • 1 tsp cumin seeds (jeera)
  • 1 no green chillies (according to taste)
  • 4 nos garlic cloves
  • water (as needed for grinding)

Other Ingredients:

  • 2 tbsp oil
  • 2 nos onions (medium sized, finely chopped)
  • 1 no tomato (large, finely chopped)
  • 1 tsp red chilli powder
  • ½ tsp turmeric powder (haldi)
  • 2 tsp coriander powder
  • ½ tsp garam masala powder
  • 2 cups water
  • salt (as per taste)
  • 3 nos eggs

Instructions
 

  • In a blender, grind together coriander leaves, cumin seeds, green chilies, garlic, and some water to form a fine paste.
  • Heat 2 tablespoons of oil in a pan and add the finely chopped onions. Fry until they turn pinkish.
  • Add the finely chopped tomatoes to the pan and cook until they become soft.
  • Stir in the red chili powder, turmeric powder, and coriander powder. Cook for another 2 minutes.
  • Add the prepared paste to the pan and fry until a nice aroma develops.
  • Sprinkle garam masala powder and salt, and continue cooking.
  • Pour in 2 cups of water for the gravy and bring it to a boil.
  • Break the eggs into the pan and sprinkle salt and pepper powder over them.
  • Be careful not to overcook the eggs.
  • Serve the dish hot with chapatis or roti.
