Sabudana Vada

Ingredients
- 1 kg Potatoes
- ½ kg Sabhudhana
- Green Chilly's as required
- Coriander Leaves a few
- ¼ kg Groundnuts
- ½ tsp Lime Juice
- Oil for deep frying
- Salt as per taste
Instructions
- Rinse the Sabhudana, and then soak it in water for an about ½ hour.
- Drain the water and keep aside for about 5 to 6 hours.
- Boil the potatoes in a cooker, once cooled peel the skin and mash it properly.
- In the mashed potatoes add crushed groundnuts, coriander leaves, lime juice, salt and mix well.
- Make round balls and roll it in the sabudana’s and coat it well ( you can add little of soaked Sabhudana in the mashed potatoes mix)
- Take a deep frying pan, add oil. once the oil is hot, drop the Sabhudana balls into the oil, and fry on a medium flame turning the vada, till the vada are cooked on all sides and turns to golden colour.
- Deep fry it till Golden Brown.
- Take it on a serving dish
- Serve it with mint chutney/tomato ketchup.
