Rinse the Sabhudana, and then soak it in water for an about ½ hour.
Drain the water and keep aside for about 5 to 6 hours.
Boil the potatoes in a cooker, once cooled peel the skin and mash it properly.
In the mashed potatoes add crushed groundnuts, coriander leaves, lime juice, salt and mix well.
Make round balls and roll it in the sabudana’s and coat it well ( you can add little of soaked Sabhudana in the mashed potatoes mix)
Take a deep frying pan, add oil. once the oil is hot, drop the Sabhudana balls into the oil, and fry on a medium flame turning the vada, till the vada are cooked on all sides and turns to golden colour.
Deep fry it till Golden Brown.
Take it on a serving dish
Serve it with mint chutney/tomato ketchup.
