Heat oil in a pan and add mustard seeds once it splutters add jeera, curry leaves, chopped green chillies and fry for a second’s.
Add chopped onion, fry till it is slightly pinkish, then add chopped tomatoes, when well-blended put in the boiled potatoes, carrots, capsicum, garam masala powder, maggie cubes, haldi powder, salt, ginger-garlic paste, mix well and cover.
Let it cook for some time. Garnish with chopped coriander leaves.
You can have hot samosas with coriander leaves chutney or tomato sauce.

Sieve the Maida
To the Maida add 3-4 tbsp oil, salt and ajwain and Mix.
Add water to the maida and make a dough and keep aside for 1 hour.
Make a chappati out of it and half bake it on a Tawa and once cool cut it into 2 pieces.
Make a cone of the one-pieces and fill it with cooked vegetables or shredded chicken and seal the samosa with maida paste or by brushing the edges with water.
